Chicken Salad with avocado and orange
|1||skinless chicken breast, boiled and shredded|
|1||orange, peeled and segmented|
|200 g||rocket salad|
|2 tbs||My Choice sliced almond, toasted|
|2 tbs||lemon juice|
|¼ cup||olive oil|
|1 tbs||capers, rinsed and drained salt and pepper|
- For Lemon dressing, in mixing bowl, mix together egg yolk and lemon juice. Slowly add olive oil while whisking until the thickened. and set aside
- Stir in capers and season with salt and pepper to taste.
- In another mixing bowl, toss together entire salad ingredients with lemon dressing and serve immediately.
