Chicken Salad with avocado and orange


1 skinless chicken breast, boiled and shredded
1 avocado, sliced
1 orange, peeled and segmented
200 g rocket salad
2 tbs My Choice sliced almond, toasted
1 egg yolk
2 tbs lemon juice
¼ cup olive oil
1 tbs capers, rinsed and drained salt and pepper


  1. For Lemon dressing, in mixing bowl, mix together egg yolk and lemon juice. Slowly add olive oil while whisking until the thickened. and set aside
  2. Stir in capers and season with salt and pepper to taste.
  3. In another mixing bowl, toss together entire salad ingredients with lemon dressing and serve immediately.
