Chicken Salad with avocado and orange


1skinless chicken breast, boiled and shredded
1avocado, sliced
1orange, peeled and segmented
200 grocket salad
2 tbsMy Choice sliced almond, toasted
1egg yolk
2 tbslemon juice
¼ cupolive oil
1 tbscapers, rinsed and drained salt and pepper


  1. For Lemon dressing, in mixing bowl, mix together egg yolk and lemon juice. Slowly add olive oil while whisking until the thickened. and set aside
  2. Stir in capers and season with salt and pepper to taste.
  3. In another mixing bowl, toss together entire salad ingredients with lemon dressing and serve immediately.
