Chicken Salad with avocado and orange
Ingredients
1 | skinless chicken breast, boiled and shredded |
1 | avocado, sliced |
1 | orange, peeled and segmented |
200 g | rocket salad |
2 tbs | My Choice sliced almond, toasted |
1 | egg yolk |
2 tbs | lemon juice |
¼ cup | olive oil |
1 tbs | capers, rinsed and drained salt and pepper |
Method
- For Lemon dressing, in mixing bowl, mix together egg yolk and lemon juice. Slowly add olive oil while whisking until the thickened. and set aside
- Stir in capers and season with salt and pepper to taste.
- In another mixing bowl, toss together entire salad ingredients with lemon dressing and serve immediately.
