Stuffed Squid with Shrimp Mousse in Curry Sauce


Prawn stuffing

1 tsp garlic, finely chopped
1 tsp coriander roots, finely chopped
1 cup Cooking for Fun white shrimp peeled & deveined with tail, minced
3 tsp Tops soy sauce pinch ground white pepper
1 egg white
2 squids, medium sizes, cleaned

Green Curry
2 tbs green curry paste
1 cup coconut milk
2 tsp Tops soy sauce
2 tsp honey
¼ cup basil leaves
1tsp red bird’s eye chili


  1. In a mortar, pound garlic and coriander root with pestle until paste forms. Mix minced prawn with soy sauce, pepper, and the paste.
  2. Stuff the mixture into the squids. Seal with toothpick. Set aside.
  3. In a saucepan, bring coconut milk and green curry paste and cook for 2-3 minutes until mixture is fragrant. add stuffed squid and season with soy sauce and honey. Transfer to serving plate decorate with basil leaves.
