Stuffed Squid with Shrimp Mousse in Curry Sauce
Ingredients
Prawn stuffing
1 tsp | garlic, finely chopped |
1 tsp | coriander roots, finely chopped |
1 cup | Cooking for Fun white shrimp peeled & deveined with tail, minced |
3 tsp | Tops soy sauce pinch ground white pepper |
1 | egg white |
2 | squids, medium sizes, cleaned |
Green Curry
2 tbs | green curry paste |
1 cup | coconut milk |
2 tsp | Tops soy sauce |
2 tsp | honey |
¼ cup | basil leaves |
1tsp | red bird’s eye chili |
Method
- In a mortar, pound garlic and coriander root with pestle until paste forms. Mix minced prawn with soy sauce, pepper, and the paste.
- Stuff the mixture into the squids. Seal with toothpick. Set aside.
- In a saucepan, bring coconut milk and green curry paste and cook for 2-3 minutes until mixture is fragrant. add stuffed squid and season with soy sauce and honey. Transfer to serving plate decorate with basil leaves.
