Stuffed Squid with Shrimp Mousse in Curry Sauce
|1 tsp||garlic, finely chopped|
|1 tsp||coriander roots, finely chopped|
|1 cup||Cooking for Fun white shrimp peeled & deveined with tail, minced|
|3 tsp||Tops soy sauce pinch ground white pepper|
|2||squids, medium sizes, cleaned|
|2 tbs||green curry paste|
|1 cup||coconut milk|
|2 tsp||Tops soy sauce|
|¼ cup||basil leaves|
|1tsp||red bird’s eye chili|
- In a mortar, pound garlic and coriander root with pestle until paste forms. Mix minced prawn with soy sauce, pepper, and the paste.
- Stuff the mixture into the squids. Seal with toothpick. Set aside.
- In a saucepan, bring coconut milk and green curry paste and cook for 2-3 minutes until mixture is fragrant. add stuffed squid and season with soy sauce and honey. Transfer to serving plate decorate with basil leaves.
