Stuffed Squid with Shrimp Mousse in Curry Sauce


Prawn stuffing

1 tspgarlic, finely chopped
1 tspcoriander roots, finely chopped
1 cupCooking for Fun white shrimp peeled & deveined with tail, minced
3 tspTops soy sauce pinch ground white pepper
1egg white
2squids, medium sizes, cleaned

Green Curry
2 tbsgreen curry paste
1 cupcoconut milk
2 tspTops soy sauce
2 tsphoney
¼ cupbasil leaves
1tspred bird’s eye chili


  1. In a mortar, pound garlic and coriander root with pestle until paste forms. Mix minced prawn with soy sauce, pepper, and the paste.
  2. Stuff the mixture into the squids. Seal with toothpick. Set aside.
  3. In a saucepan, bring coconut milk and green curry paste and cook for 2-3 minutes until mixture is fragrant. add stuffed squid and season with soy sauce and honey. Transfer to serving plate decorate with basil leaves.
