Sole with caper butter sauce
Ingredients
4 tbs | Cooking for Fun extra virgin olive oil |
4 pieces | sole fillet |
1½ cup | My Choice cherry tomatoes, halved sea salt and ground pepper |
¼ cup | butter |
4 cups | rocket salad |
¼ cup | fresh lemon juice |
¼ cup | capers, rinsed and drained |
Method
- Heat 2 tbs olive oil in medium nonstick frying pan, sear sole fillet, and season with salt and pepper on both side until cooked for 3 minutes and keep warm.
- In the same pan, heat 1 tbs olive oil on high heat, add cherry tomatoes and fry until slightly charred, remove from the pan and keep warm. In the same pan, heat 1 tbs olive oil, add saute rocket until wilted, season with salt and pepper, remove from the pan and keep warm.
- To make sauce: In the same pan, off heat, add butter, lemon juice, and capers, swirl until butter has melted. Season with salt and pepper. Serve sole over rocket and tomatoes; drizzle with sauce.
