|Waitrose Thousand Island Dressing|
|200 g||chicken Breast, cut into strip salt and pepper|
|2 tbs||Waitrose Plain white flour|
|2 tbs||olive oil|
|½||yellow bell pepper, cut into strip|
|½||green bell pepper, cut into strip|
|1||carrot, cut into chunks|
|1½||cup chicken stock 1 Cooking for Fun bay|
- Season the chicken with salt and pepper, toss with flour. Heat oil in saucepan over high heat and seal the chicken in the saucepan until brown then quickly remove from heat, keep warm.
- In the same saucepan add the vegetables and stir until lightly brown. Add chicken stock, bay leaf and thyme. Bring the stock to boil and simmer for 20 minutes then add the chicken. Stir in butter and cream, Season with salt and pepper to taste. Bring to simmer and remove from heat.
