Sole with caper butter sauce
|4 tbs||Cooking for Fun extra virgin olive oil|
|4 pieces||sole fillet|
|1½ cup||My Choice cherry tomatoes, halved sea salt and ground pepper|
|4 cups||rocket salad|
|¼ cup||fresh lemon juice|
|¼ cup||capers, rinsed and drained|
- Heat 2 tbs olive oil in medium nonstick frying pan, sear sole fillet, and season with salt and pepper on both side until cooked for 3 minutes and keep warm.
- In the same pan, heat 1 tbs olive oil on high heat, add cherry tomatoes and fry until slightly charred, remove from the pan and keep warm. In the same pan, heat 1 tbs olive oil, add saute rocket until wilted, season with salt and pepper, remove from the pan and keep warm.
- To make sauce: In the same pan, off heat, add butter, lemon juice, and capers, swirl until butter has melted. Season with salt and pepper. Serve sole over rocket and tomatoes; drizzle with sauce.
